This dish is such an effortless way to use up those gluts.

This quick and easy dish takes 5 minutes to prepare and only half an hour in the oven, and is the perfect way to use up that glut of courgettes and tomatoes from the garden. Serve this with rocket and cool burrata for an even more indulgent dinner.

Ingredients
  

  • 3 courgettes
  • 500 g tomatoes
  • 320 g pre-rolled puff pastry
  • 2 tbsp olive oil
  • 25 g rocket
  • 150 g burrata

Instructions
 

  • Preheat the oven to 160 degrees C.
    Slice the tomatoes and courgettes into 5 mm slices.
    Place the puff pastry on a baking tray lined with grease proof paper and arrange the slices of tomato and courgette on top and drizzle olive oil, salt and pepper on top
    Bake in the oven for 30 minutes. Once removed from the oven, leave for 5 minutes until it cools a little before adding the burrata and rocket.
