This is another quick midweek meal that is great for using up that veg in the veg box. In my kitchen, I had broccoli and pickled carrots to use up but you can swap these for any veg. Just mix the veg in with cooked quinoa, and add citrus vinaigrette.

For an extra speedy dish use pre-cooked quinoa, but it should take just 20 minutes on the stove if you are doing it yourself.

Citrus quinoa with broccoli and pickled carrots
Ingredients
- 200 g quinoa
- 1 broccoli head
- 200 g pickled carrots
- 4 tbsp citrus vinaigrette
Instructions
- Cook quinoa according to the manufacturers instruction's.
- Break the broccoli into florettes, and boil for 4 minutes or steam for 6 minutes. This should heat the broccoli and slightly soften it, but it will still hold a lot of crunch and stand up to the pickled carrots, that are also crunchy.
- Mix all the ingredients together in a bowl and serve.
