This is another quick midweek meal that is great for using up that veg in the veg box. In my kitchen, I had broccoli and pickled carrots to use up but you can swap these for any veg. Just mix the veg in with cooked quinoa, and add citrus vinaigrette.

  • Cook quinoa according to the manufacturers instruction's.
  • Break the broccoli into florettes, and boil for 4 minutes or steam for 6 minutes. This should heat the broccoli and slightly soften it, but it will still hold a lot of crunch and stand up to the pickled carrots, that are also crunchy.
  • Mix all the ingredients together in a bowl and serve.
